For as long as I can remember, I've kept some kind of a journal. I got a diary in every Easter basket growing up, and I'd make it my mission to fill those bad boys up with all of my deepest tweenage thoughts by Summer! When you are as talkative as I am, people tend to hand you blank pages with the instruction to "Go on ahead and write all that down, kiddo!" What I loved most, was looking back at all the progress I had made, how my views changed over time and how those moments you SWORE you'd never make it thru, became the moments you realized your own strength! So, buckle up - I've got endless Easter basket diary knowledge to drop on ya!

I need a whole new blog for all the Pinterest Fails I've encountered over the years. Everything from a SUPER hot mess attempt at a ShipLap accent wall, due to a marathon viewing of "Fixer Upper" (Chip & Joanna make it look so easy!)... To a dozen cupcakes that were SUPPOSED to look like "Under The Sea" themed seashells, but really just ended up looking like saggy vagina's. I could go on, but you catch my drift!


Now you see why, when I have some Pinterest Success - I celebrate that shit!


I have no idea what diet catagory you'd put me in these days. I tried Keto for 8 months and I SWEAR TO GOD if I ever see another hot dog or pack of lunch meat - I'll put my head thru a wall! I tried Paleo for almost 6 months but BREAD IS AMAZING so cutting out grains for life ended up being a dealbreaker! Nowadays, I focus on healthy alternatives and good clean fats, proteins, carbs - that seems to be working for my metabolism and overall temperment! Lol


I kept seeing this Avocado Egg Breakfast and finally got around to trying it out, so I did a little test run before I made if for the fam this weekend - Afterall, a PinFail didn't really happen if no one is there to witness it. Lol


So, here it is:


Prep is so easy, the hardest step was waiting for the over to pre-heat :)

You need:


*Halved & Pitted Avocados

*2 Large Eggs

*1/2 Shredded Cheddar Cheese

*Pre-Cooked Bacon


Instructions:


-After avocados have been halved & pits removed, remove approx half from the insides - creating a good sized cavity for your egg

-Crack one eggs contents into each avocado half

-Sprinkle 1/4 cup of shredded cheddar cheese on top of egg

-Crumble cooked bacon on top of shredded cheddar cheese

-Place on foil-lined cookie sheet

-Bake @375 degrees for 15 mins

-Devour :)
