If carbs are the enemy for you, like they are me - this dish is going to be your new BFF! High on Protein and BIG on flavor, you won't even miss the rice or bread I PROMISE!
What you'll need:
2 Cups Broccoli (cut into florets)
2 Cups Cauliflower (cut into florets)
2 Cups Shredded Mozzarella (low moisture)
1 Pound Chicken Breast (diced)
1 Onion (diced)
1/2 Cup Heavy Cream
4 Tablespoons of Garlic (minced - adjust to your flavor palette)
4 Tablespoons of Butter (1/2 Stick)
2 Tablespoons of Coconut Oil
1 TableSpoon Salt & Pepper
Prep Instructions:
In a skillet - add chicken, onion, garlic and coconut oil. Saute on medium heat until chicken is cooked and onions are translucent. Set aside.

In a medium mixing bowl - add broccoli, cauliflower, shredded mozzarella (set aside 1/3 cup for topping) and heavy cream - stir until it's all combined evenly.

Add the cooked chicken mixture to your Cauli/Brocc medley and stir evenly.
Add this blended mixture to an oven safe casserole dish and top with leftover 1/3 cup of mozzarella.

Cooking Instructions:
Cook uncovered for 20 minutes @ 375 degrees
Let it sit for 5 minutes before serving, unless you're like me with no patience... Then just eat it like a savage and lick the plate clean :)
