For as long as I can remember, I've kept some kind of a journal. I got a diary in every Easter basket growing up, and I'd make it my mission to fill those bad boys up with all of my deepest tweenage thoughts by Summer! When you are as talkative as I am, people tend to hand you blank pages with the instruction to "Go on ahead and write all that down, kiddo!" What I loved most, was looking back at all the progress I had made, how my views changed over time and how those moments you SWORE you'd never make it thru, became the moments you realized your own strength! So, buckle up - I've got endless Easter basket diary knowledge to drop on ya!

#BreakfastIsMyJam

Seriously, tell me one thing better than breakfast ya'll! Breakfast has so much to do with how you kick off your day and provides the fuel for all the badassery needed for the upcoming 24 hours!


Also my jam? Intermittent Fasting - and whether I am IF or not, my first meal of the day is ALWAYS breakfast because well, BREAK FAST!


This breakfast banger is my fave, a little something from all the best food groups and it satiates perfectly!


Slow Scrambled Eggs


2 Whole Eggs

1 Egg White (whisked for 1 minute to give them a little air)

1/3 Cup Heavy Cream

2 Tablespoons of grated parmesan

2 Tablespoons of coconut oil


Combine whisked egg white with the whisked 2 whole eggs, heavy cream and HALF the grated parm. Turn stove top to LOW heat and add coconut oil to pan. Add egg mixture and slowly stir eggs - The trick is to KEEP stirring the eggs until ALL the clear eggy googly stuff (yep, thats my professional chef term for raw egg) is cooked - typically it takes 1-2 minutes over low heat to get there. Once your eggs have come together, take them off the heat and set them aside. They will continue to cook for a minute or so off heat. Slide them on a plate, garnish with the remaining grated parm and your favorite hot sauce & WHA-BAM it's grub time!




The first bite of this bagel always commands a "Ohhh Get It Girl!" because its so damn good! Did I mention it's simple too!


Get It Girl Bagel


1 Bagel, sliced (My fave Keto bagel recipe is here )

2 Tablespoons Almond Butter

1 Banana, sliced

1 Tablespoon Ground Flax

1 Teaspoon Agave Nectar



Lightly toast bagel, then spread a thin layer of almond butter on both halves. Place sliced banana's on top and then sprinkle flax on top. Add a drizzle of agave on top and DE-VOUR!!


I always try to incorporate some kind of green in every meal, so a simple handful of butter lettuce, sliced grape tomatoes and a sprinkle of vinegar/olive oil is my easy go-to!
