For as long as I can remember, I've kept some kind of a journal. I got a diary in every Easter basket growing up, and I'd make it my mission to fill those bad boys up with all of my deepest tweenage thoughts by Summer! When you are as talkative as I am, people tend to hand you blank pages with the instruction to "Go on ahead and write all that down, kiddo!" What I loved most, was looking back at all the progress I had made, how my views changed over time and how those moments you SWORE you'd never make it thru, became the moments you realized your own strength! So, buckle up - I've got endless Easter basket diary knowledge to drop on ya!

Stop me from licking my screen!

These pancakes were SUPER yummy, protein packed and HEALTHY!

I'll definitely be adding these to my breakfast line-up - Rowyn asked for 2nds and that's ALWAYS a good sign!



About 3 weeks ago, I was at the grocery store and saw a whole display for Kodiak Cakes so I decided to grab their Peanut Butter Pancake Mix and a couple boxes of their Blueberry Frozen Waffles.


16 grams of Protein

3 grams of Sugar

6 grams of Fiber

That's all I needed to see, it was all going to come down to taste!


I got home and got to work tweaking the recipe as I almost always do, and I came up with a WINNER!

Let me just say, the PB Pancake Mix doesn't need a single tweak - they're BOMB. com all by themselves, but I love to tweak for the fun of it, so I did!


-->1 Cup of Kodiak Cake Pancake Mix

-->3/4 Cups of Water (you can sub milk and egg if you want to bump the protein to 18 grams!)

-->2 Ripe Bananas mashed up (I just used a fork until they looked like baby food)

--> 1/2 Cup Peanut Butter (almond/cashew/sunflower butters work great too)

--> 1/3 Cup Cacao Nibs (Mini Chocolate Chips work too)

---> Coconut Oil


Super easy assembly:


1. Combine Pancake Mix, Water, Mashed Bananas in a shake mixer and shake what ya mama gave ya!!


2. Add Coconut Oil to hot pan, and pour 1/3 pancake mix in skillet


3.When batter starts to bubble, flip pancakes over and do a little happy dance - You're almost ready to grub!!


4. Repeat until you've used all your mix!

(1 serving makes 4 pancakes)


5. Microwave peanut butter for 30 seconds and stir, it should be thin and easy to drizzle. Drizzle peanut butter on top of your pancakes & sprinkle cacao nibs on top.


6. Find a quiet spot so you can eat them like a savage without judgement!!!
