For as long as I can remember, I've kept some kind of a journal. I got a diary in every Easter basket growing up, and I'd make it my mission to fill those bad boys up with all of my deepest tweenage thoughts by Summer! When you are as talkative as I am, people tend to hand you blank pages with the instruction to "Go on ahead and write all that down, kiddo!" What I loved most, was looking back at all the progress I had made, how my views changed over time and how those moments you SWORE you'd never make it thru, became the moments you realized your own strength! So, buckle up - I've got endless Easter basket diary knowledge to drop on ya!

Keto Diet has been one HELLOVA journey so far, too say I'm obsessed with perfecting recipes is an... Understatement. I mean, I feel like I have to dig through all the obscure recipes out there to find the gold - and then NOTHING excites me more than sharing with friends! Even if you aren't a big bagel fan - one thing is clear... Keto leaves you missing that "carby bready" texture in food and I am a big fan of anything I can hold in my hand so alas, bagels become an obsession :) Out of the millions of recipes out there on the interwebs, I found the one I like best, and I will tell you - getting a donut/bagel baking pan is the real hack! If you are committed to Keto, the pan is a great investment because you'll be making these often!



serves - 4 prep time - 15 mins cook time - 15-17 mins net carbs - 4g



Ingredients

8 ounces (2 cups) shredded mozzarella cheese (1/2 set aside for topping) 4 ounces (1 cup) blanched almond flour 1 ounce (2 tablespoons) cream cheese 1 large egg 1/2 tablespoon olive oil 1 1/2 teaspoons baking powder Seasoning Mix Ideas

1 tablespoon dried dry minced onion 2 teaspoons poppy seeds 2 teaspoons white sesame seeds 1 teaspoon garlic powder 1/4 teaspoon salt

Instructions

-Heat the oven to 375 F. -Grab Bagel/Donut pan or prepare a baking sheet lined with parchment paper or a nonstick silicone baking mat.

-In a large microwave safe bowl, add almond flour, baking powder. Mix well.

-Add (ALL BUT 1/3 cup) mozzarella cheese, 1/2 your seasoning mix, cream cheese to the same bowl. -Microwave for 45 seconds, stir, then microwave for another 45 seconds or until the cheese is melted. Stir until the mixture forms a smooth dough.

-Add the egg to the same bowl, blend with your hands, it's easier BUT be careful of the heat from melted cheese.

-Divide the dough into 4 equal pieces. Shape each piece into a log about 6 inches long, and attach the ends to form a bagel shape. -Place the bagels in Bagel pan slots or place at least 1 inch apart on the parchment lined baking sheet.

-Brush olive oil across the tops. -Sprinkle remaining mozzarella cheese on tops of bagels

-Bake at 375 F until golden brown on top, about 20 minutes. **Since all ovens are different, keep an eye on them at 15 minutes.
